Olive Oil Pancakes

1 3/4 c. flour
2 TBS sugar
2 tsp. baking powder
1/2 tsp baking soda
1/4 tsp salt
1 egg, slightly beaten
1 1/2 c. buttermilk
1/4 Extra Virgin Olive oil - we use Olea Farms Arbequina
1/2 good dark chocolate - chopped
Mix the dry ingredients and set aside. Whisk the egg in the buttermilk with 2 TBS. of the olive oil. Mix all ingredients together until incorporated.
Heat 2 TBS olive oil in skillet and ladle 1/4 c. batter into the pan. Top with pieces of chocolate and cook until bubbles appear. Flip and cook until golden.
