Easy (way too easy) Crazy Fruit Salad
On April 1, AKA April Fool's Day, we had a small dinner party. We greeted everyone that evening with a cheerful "Good Morning!" and had a pre recorded Today Show on the TV. John and I both had jammies and slippers on and provided some crazy pajama pants for our guests to wear (Old Navy sale rack had some super fun jammie pants - sizes XXL) Our confused group finally got it and we continued the morning, or brunch, theme and the April Fool's gag and then we served Bloody Mary's and Mimosas and breakfast for dinner (a la Petit Soleil!). The evening was light-hearted and casual and fun! We love breakfast for dinner, anyway!
I made this salad which I am craving, and making, now every night...especially as the fruit right now is so so delicious!
It is :
Baby Spinach - a good bunch!
Large sweet strawberries, sliced
Kiwis, peeled and sliced
1/2 sweet onion, thinly sliced
1/4 English cucumber, sliced
Blue or Feta cheese, crumbles
Petit's Red Pepper-Fennel nuts, chopped
The salad began with the spinach and I just tossed all the other goodies on top- the nuts sprinkled over all. I served it with a store bought Poppyseed dressing.
Really good and fresh and healthy!
