Coconut Macaroons

John went ga-ga over the macarons that I made over the holidays. The recipe is from my favorite foodie, Ina Garten - I just changed it up a bit.

3 eggs, separated
1 tsp.salt
1 bag flaked coconut
1 can sweetened Condensed Milk
1 tsp. vanilla
1 tsp. almond extract
1/2 c. ground almonds (or almond meal)

325 degrees. Line a cookie sheet with parchment paper.

Beat the egg whites with the salt until stiff peaks form.

Mix the coconut, condensed milk, extracts and almonf meal together. Gently fold in egg whites being careful not to overmix.

Drop by rounded tablespoonfuls onto parchment paper and bake for 13-16 minutes..be careful not to overbake. Let cool about 1 minute before removing the cookies onto racks.
Store whatever you do not immediately devour in airtight containers
