Sorghum Almond Cookies
OK...I got a thumbs up on this cookie that I baked for my trainer and friend, Teresa, who, sadly cannot eat any form of wheat or oats or any other grain that contains glutens......(tears falling down). The cookies have a nice spicy flavor and a light consistency - Nancy (another trainer at Infinate Dynamics) said that they taste like Lebkuchen...hmmmm YUM!
(they are vegan, too)
Sorghum Almond Drops
1 cup sorghum flour
1/2 cup almond meal
1/4 cup slivered almonds
1/4 cup dark brown sugar
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. ground ginger
½ tsp. freshly ground nutmeg
1/8 teaspoon salt
1/3 cup honey
1/4 cup oil
1 tablespoon water
1/4 teaspoon almond extract
1 Tbs. freshly grated orange peel
2 tablespoons powdered sugar
Preheat oven to 350 degrees
In a medium bowl mix together sorghum flour, almond meal, slivered almonds, dark brown sugar, baking powder, spices and salt. In another bowl stir together honey, oil, orange peel, water and almond extract until thoroughly combined.
Add the honey mixture to the flour mixture. Stir until all the flour is mixed in. Shape by hand into 1 1/2-inch balls. Bake for 10 minutes. Cool and roll in powdered sugar.

We had a powerful rain storm last week and the hills are once again lush and green - the air is clean and fresh and it is a lovely time to visit San Luis Obispo!
